Day 7- 2 cups flour
- 1 cup sugar
- 1 Tbsp grated orange peel
- 1 1/2 tsp baking soda
- 3/4 cup orange juice
- 2 Tbsp butter, margarine, or shortening, softened
- 1 egg
- 1 cup fresh or frozen cranberries, chopped
- 1/2-1 cup chopped nuts
Combine all ingredients except cranberries and nuts in large bowl; mix well. Stir in cranberries and nuts. Pour into greased and floured pan(s) (Bundt pan, large or small loaf pans). Bake 35-45 minutes (depends on pan) at 350° or until toothpick inserted comes out clean. Immediately remove from pan. Serve warm or cool.
