Pumpkin Cake

I got this recipe from my mom, but I guess it originated from Nancy Ford - it was in the newspaper way back when or something.  


Crust:
  • 1 yellow cake mix (take out 1 cup for topping)
  • 1 egg
  • 1/2 cup butter, melted
Mix and press into greased 9"x13" pan.

Filling:
  • 3 cups pumpkin
  • 2 1/2 tsp pumpkin pie spice
  • 1/2 cup brown sugar
  • 2 eggs
  • 2/3 cup evaporated milk
Mix ingredients, and then pour over crust.

Topping:
  • 1 cup reserved cake mix
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 cup butter
Mix ingredients and sprinkle over top.  Bake at 350° for 45-50 minutes.

This is one of my favorites...but try it with a spice cake mix and then let it chill in the fridge overnight before you eat it...its AWESOME!!

Nancy was in our ward and this recipe was from a church activity--I think a Christmas dinner :)
