Dinner in a Pumpkin

This is kind of a family Halloween tradition, but we didn't get around to doing it this year (so I stole the picture from my sister - thanks San!), but I did want to share it so you can make it next year if you want (sorry I didn't get it soon enough to do this year).


  • 10” pumpkin
  • 1 lb ground turkey or beef
  • small onion, chopped
  • bell pepper, cut into big chunks
  • salt to taste
  • pepper to taste
  • 1 egg, slightly beaten
  • 2-3 potatoes, peeled and diced (would help to cook some ahead of time or use thawed, frozen cubed potatoes)
  • 1 (8 ounce) can tomato sauce
  • 1 Tbsp vinegar
Preheat oven to 350°. Prepare pumpkin—cut top like carving and clean out the insides real well. Cook meat and onions; add potatoes to pre-cook a bit; remove rom heat and add other ingredients. Pour into pumpkin and put top back on. Place in pie plate or cookie sheet. Bake for about 45-60 minutes until pumpkin is cooked. Serve by scooping out—scraping sides of pumpkin as you do.

This is great for a Halloween feast!
