Baked Ziti

I made this tonight and it turned out pretty tasty.  I used lowfat ricotta to lower the fat/calories a bit.  To make it even healthier, you could use whole wheat pasta and low fat mozzarella as well.  This is SO easy - great for one of those nights (like tonight) when I don't feel like putting much effort into cooking!

  • 1/2 pound cooked penne pasta
  • 1 cup ricotta cheese
  • 6 oz shredded mozzarella
  • 10 oz marinara sauce
  • 2 egg whites
Boil and drain pasta.  Mix together ricotta, mozzarella, and egg whites in bowl.  Pour sauce and cheese mixture onto pasta and mix thoroughly.  Bake at 350° for 35 minutes.
