Salsa Enchiladas

I made these this weekend.  They're one of my favorite "quick and easy" meals.  They're easy to have the ingredients on hand and so fast to make!  This is a great recipe to to make when you're in a hurry or don't feel like cooking, but need to make something for your poor starving family.  Or if you need to bring someone a meal, these are great too.
  • 1-2 lbs ground beef or turkey
  • 4 cups salsa (more or less)
  • 1 1/2 cups shredded cheese (I use the Mexican blend)
  • 1 (12 count) pkg corn tortillas (white corn are the best!)
  • 1 (19 oz) or 2 (10 oz) cans enchilada sauce (preferably Verde/green sauce)
Heat oven to 375°.  Brown ground beef or turkey over medium-high heat until thoroughly cooked, drain.  Stir in salsa and 1 cup cheese.  Spoon enchilada filling into tortillas.  Roll up and place seam-side down in lightly greased 9x13" baking dish.  Pour enchilada sauce over top; sprinkle with remaining 1/2 cup cheese.  Bake for 15-20 minutes.

Serves 6.
