Almost California Pizza Kitchen BBQ Chicken Pizza

I just thought that I'd start the blog out right with a yummy recipe.  Tonight seems like a pizza night, so here's my take on homemade pizza :)

  • 1 Boboli pizza crust
  • 1 pkg grilled chicken breast strips
  • 1 cup favorite BBQ sauce (I prefer Mo's Sweet Carolina's BBQ Sauce)
  • 2 ounces Gouda cheese, shredded
  • 4 ounces mozzarella cheese, shredded
  • 1/2 red onion, thinly sliced (I eliminate this on 1/2 of the pizza for the kiddos)
  • 2 Tbsp fresh cilantro, chopped
Preheat oven to 450°F.  Place Boboli on baking pan.  Cut chicken into bite-sized pieces.  Mix with 2 Tbsp of the BBQ sauce in a small mixing bowl.  Coat the crust generously with the remaining BBQ sauce.  Sprinkle smoked Gouda cheese over sauce.  Cover with most of the mozzarella cheese.  Top with chicken pieces.  Cover with the thinly sliced red onion.  Top with remaining mozzarella cheese.  Bake for 10-12 minutes until cheese is melted.  Remove from oven and top with cilantro.  Slice and Serve.

This pizza looks good. My first recipe suggestion is ramen noodles with spaghetti sauce a la Shawna and Jessica!! HA!

I'm messing with zucchini in every recipe I can think of and will post when I get the "perfect" kid-tested, mother-approved zucchini bread recipe:)
